I just finished trying my Leche flan and it turned out better than my last attempt. Its actually a popular Filipino dessert almost the same to creme caramel. Its so deliscious yet very easy to make.
Leche Flan Recipe
5 whole eggs
3 egg yolks
(good tasting leche flans only uses egg yolks)
1 can of condensed milk
1/2 a can of evaporated milk
a dash of vanilla essence
white sugar for caramelizing
Prepare the steamer and start boiling the water
While waiting for it to boil, crack the eggs on a mixing bowl and mix all the ingredients aside from the sugar. Give it a good whisk. As soon as you encorporated the ingredients and the texture becomes smooth, stop beating to prevent air bubbles.
On a small pan, pour the white sugar (i onlu used 12tbsp since Im only be using one big tray for it. I out a little amount of water so it'll caramelize faster. wait until it turns light brown.
pour the caramel on your moulding tray followed by the egg mixture. Cover it up with a foil before putting it in the steamer. Reduce the heat to medium and let it boil slowly. wait for about 30mins, depending on the thickness. You can check if its ready by poking a stick on the middle. Chill before serving. Enjoy!
